you know that saying “start where you are and use what you’ve got”? that’s kind of how this salad came about. and as i looked at it before i took my first bite i couldn’t help but think how much it looks like spring. it tastes like spring too; light, sweet, smokey. i had it for breakfast this morning with two hard boiled eggs but this salad is not a one trick pony. it could be served as a first course or side dish. or if you’re the outdoorsy type throw some salmon on the grill and serve it as an entree salad with salmon.
